We have spent a long time tasting and sourcing the best possible Jamon and Iberian Pork meat for our menu. The pork we have chosen comes from a small farm in Guijelo near Salamnca. The Pigs are the famous “Black Iberian” pigs and they are reared totally organically and free range and fed a rich diet of Acorns. This unique diet gives the meat an especially nutty flavor and actually fills the meat with a wide range of health benefiting vitamins and minerals.
The meat is best eaten with your fingers so that it can warm up and then melt in your mouth.
